Born in Kyoto to a family of fishmongers, Chef Sakamori's journey began in the predawn hours of Tsukiji Market, where he learned to distinguish the finest fish by touch alone. At 16, he was rejected from seven prestigious sushi establishments before finally securing an apprenticeship under the notoriously demanding Master Yamamoto.
For eight grueling years, Sakamori endured the brutal hierarchy of traditional Japanese kitchens—washing rice for two years before being permitted to touch a knife, sleeping on the restaurant floor, and facing daily humiliation that would break lesser spirits. When a kitchen fire destroyed Master Yamamoto's restaurant, Sakamori used his life savings to help rebuild, earning his master's respect and the coveted title of "Shokunin."
After earning two Michelin stars in Tokyo, Sakamori made the controversial decision to leave Japan, facing ostracism from his peers. In Del Mar, he found his true calling—creating a bridge between the uncompromising standards of Japanese tradition and the innovative spirit of California cuisine.
